“When I checked in, I was given the last available room. It had one bed even though I requested (requested being the key word) two beds. I would be sharing a room with someone and even though I don't mind sharing a bed, I did not know how the other person would feel. I was told my request for 2 beds was just that, a request. They are not obligated to give me what I requested. Okay, so I would be sharing a bed. Fine.
Then I went upstairs, put the key in the lock, and opened the door. There on the bed, was a couple... um... enjoying themselves. They looked at me, I looked at them, and then I ran out the door. I went down to the front desk and told them what happened. They told me that they didn't know which rooms had been given out that day. The man checked a few things on his computer and told me, "Whoops, that was the room of the couple who just got married here." How did he know who was occupying the room and the other guy at the desk didn't even know the room was occupied? So I got another key and he was pretty positive it was empty. I went upstairs, put the key in the lock, and the door didn't open. I had to go back down to the desk. I was getting tired of lugging my luggage all over the place. He checked the key and gave it to me again, assuring me it would work this time. I went upstairs, put the key in the lock, I was happy to find that the key opened the door and even happier to find that the room was unoccupied.
The room was missing an iron and the light bulbs in both of the lamps. The bathroom light was out as well. Why would they give someone a room without making sure everything was working as it should?”

The Thai New Year (Thai: สงกรานต์ Songkran) is celebrated every year on April 13 to April 15. Sri Lanka also celebrates a similar festival called Sinhalese and Tamil new year on the same dates.

If these days fall on a weekend, the missed days off will be taken on the days immediately following (But Sri Lanka still uses an astrological calculation to set the dates and times based on the sun's positional change and those dates and times are used to start the festival events). Until 1888 the Thai New Year was the beginning of the year in Thailand; thereafter April 1 was used until 1940. January 1 is now the beginning of the year. The traditional Thai New Year has been a national holiday since then.

This very popular form of fragrant water is made from freshly gathered flowers and contains no alcohol. The flowers used are selected for their sweet and lingering fragrance, some of the more common ingredients being the flowers of damask rose (Rosa damascene Mill.), jasmine, “lam-chiak” (Pandanus tectorius Bl.), “kradang-ngaa-thai” (Cananga odorata Hook.f. & Th.), orange champaka (Michelia champaca Linn.), “chammanaas”(Vallaris glabra Ktze.),bullet wood, “lamduan” (Melodorum fruticosum Lour.) and “chan-ka-pho” (Vatica diospyroides Syming.). Other ingredients used include the leaves of fragrant screw pine, the inner bark of “chaluut” (Alyxia reinwardtii Bl.bar. lucida Markge.), sandalwood, Siam benzoin, jasmine and hyacinth (Hyacinthus orientalis Linn.)oils.
Thai-style fragrant water is applied liberally onto the face, chest and arms during the hot climate. It is also recommended for use in cases of fainting. A thick made by mixing scented marl with fragrant water is used as an anointment in various ceremonies.
Thai Hom Mali rice is indigenous to Thailand. In the past, it has been variously labeled as "fragrant rice", "jasmine rice", "aromatic rice" or "scented rice". This variety of rice can only be grown in the hot, sunny climates of Southeast Asia. However, Thailand has developed three varieties of Thai Hom Mali called Khao Dok Mali 105, Khao Jao Hawm Klong Luang 1 (KLG1) and Khao Jao Hawm Suphan Buri (SPR-A), which have produced higher yields and higher resistance to diseases and insect pests. Therefore, Thailand has become internationally recognized as a leading exporter of this unique rice.

Muay Boran is the Other name of Ancient Thai Boxing. It is a traditional form of Muay Thai which is still taught and practiced in Thailand. Muay Boran is still practiced and taught in order to preserve the Boxing Techniques from Muay Thai's History before the introduction of formalized rules and the introduction of gloves in the 1930s. Muay Boran is the ancestor of the modern day Muay Thai Boxing. Most of the Facts of Muay Boran have been extinct now, many of the original records from Thailand regarding this fascinating subject were destroyed in the sacking of Ayuddhaya in 1767 and others lost in the mists of time. The late Arjarn Samai Messamarn from the Buddhai Swan Institute in Thailand was able to make a study of the Thai empty hand system using the scant resources available in Thailand. This research also took him to Burma where he was able to gain access to historical records on the subject of the Siamese systems of warfare. Using this information and the painstaking research done within Thailand, Arjarn Samai was able to document and confirm 60 Awudt Muay Boran techniques and fighting methods. Only two records of the techniques, hand-painted on parchment now exist. Arjarn Samai's son, Arjarn Werayut Messamarn recently visited England bringing with him one of these unique documents. It is believed that the Siamese people had their own styles of fighting, in each Kingdom a different style. These fighting systems have clearly been evolving for many hundreds of years and have been known under many different names such as; "Arwut Thai" (meaning Thai Weapons), "Pahuyut" (armed, unarmed combat). Much later, at the end of the Ayuthaya Period, or around the beginning of the Thonburi

Teaching Ancient Muay Thai" Period after a long history of fighting against the Burmese, King Phra Thaksin "The Great" finally pushed all invaders from the Kingdoms of Siam and with this the Chakri dynasty began. The Chakri dynasty with King Rama I on the throne, marked a period when nearly all of the separate Kingdoms of Siam joined together to become the country we now know as Thailand. At the end of the 1700's, with wars against invaders over,fighters began to compete locally, and often in front of the King to see who had the best style. Most people recognize this period in the history of Muay Thai as fighters used to wrap their hands in cotton twine. Today, people refer to this style of fighting (during this period) as "Muay Kaad Chuak" although at the time, this isn't the term people used. "Muay Kaad Chuak" began to decline around the 1920's, finally ending in 1929 with a death in the ring. Although the government of the time prohibited this style of fighting(with wrapped hands) people still continued to practice the arts and fight underground. Eventually, by introducing rules, and providing fighters with better protection, competition became safer, and the sport of Muay Thai was born. Here are some information of the techniques used: Technique 6 (Buddhai Swan) - The boxer grabs the opponent's neck twisting him from side to side, and then throwing a knee to the opponent's body, finally the boxer will push the opponent away finishing with a high kick to the opponent's neck. To clarify, the name given to the technique usually refers to an action within that technique, not necessarily the whole technique or even the end result but for instance the action of breaking (hak) the neck (kor) in Hak Kor Erawan or the action of presenting or offering something up in Hanuman Tawai Wen. From the 60 major techniques in the Buddhai Swan syllabus there are other minor techniques plus many different variations and additional moves that can follow on from the main techniques. A good example of this is the technique "GAA JIK KAI" translated Crow pecks the egg which is basically fast jabs to the opponent's face but from the jab one could choose any technique e.g. round kick (daet), front kick (teep), right uppercut (uppercut kwaa) or many others.

Besides the Buddhai Swan techniques, we have uncovered at least another 60 different techniques from various sources including Arjarn Yodthong from the Sityodthong Camp, Arjarn Panya Kraitus author of the book "Muay Thai Most Distinguished Art of Fighting", the late Khun Bunyuen Suvanatdha former head of the Amateur Muay Thai Association of Thailand and Kru Lang of the Sitpralang Camp in Ayuddhaya.

The discovery of Muay Boran in the West has taken us on a journey back through time. The modern sport of Muay Thai has been established here for nearly 30 years, we are now moving backwards and have discovered the time before sport when contests were fought for honour or freedom. It is merely a blink of the eye in time before we reach our final destination and find the mother of the Thai martial arts - Krabi Krabong.

Songkran Day or Thailand New Year is one of the biggest events in Thailand each year. Thailand must be the only country in the world that actively celebrates 3 different New Years each year! There is the New Year on the 31st of December, then there is the Chinese Lunar New Year that takes normally place in February and there is the Thai New Year itself which is in April each year.

There is nothing that compares to the Thailand New Year. Imagine parades, shows, music, lots of people having fun and the biggest water fight in the world! Songkran is a Thai word which means "move" or "change place" as it is the day when the sun changes its position in the zodiac.

There are 2 main parts of the Thailand New Year water plays: Water of course and white powder that people will put in your face.

On the streets, many stalls will be selling water guns of all sizes for 100-about 800 Baht for the biggest ones. Now all you need is some water which you can also buy on many places on the street. Normally, shop keepers will have big barrels of water standing on the streets that are constantly refilled with water. You can pay a small fee and are then able to use the water non-stop. It is a lot of fun. Just beware of the ice water that some are using! Songkran is a traditional festival and before it comes people concern upon environment with cooperation such as to clean houses, public places, temples and official buildings.

Songkran is a time when workers in Bangkok from outside of town, head back home in droves. All forms of transport are booked months in advance and if you don't have a reservation, forget it, you are going nowhere. It is actually a nice time of the year to be in Bangkok, for the Songkran period it is relatively deserted.

The Tourism Authority of Thailand organizes the walking streets in front of Central World Plaza, one of the big Thailand property (http://www.thaiproperty.co.uk/), all the way through Silom Road and up to Siam Square where another event will be held the platform at Sanam Luang near the Grand Palace.

There are some extra activities will be held to make it more enjoyable such as, DJs will be playing all kinds of music, people throwing water on each other and putting powder on their faces as well as dancing on the streets.

Not only tourists, but also investors who want to invest in property in Thailand like to visit Bangkok during the Songkran day and they also take part in these activities. When you are going out during the festival then wear the worst clothes or buy a cheapest one because you are going to be wet for sure. People usually don’t bring their mobile phone and camera when the celebration is on the peak then its very difficult to safe all these things.

The Songkran day which is known as the Thai New Year brings more joy and happiness and people eagerly wait for this festival every year. They really enjoy every moment of these four days and have fun in their life.

When I was a kid growing up in the UK in the 50's I hated even the smell of curry only getting a taste for it later in adulthood.

After trying Indian curries and loving them all especially the more spicy (hot) ones. However, eventually I found myself in Thailand and for the first time experienced real flavour instead of mostly heat and a blandish monotone flavour.

Thai curry has the unique characteristic of being able to balance spicy and delicate flavours in such a way as one, does not over power the other.

Thai curry uses a whole different range of spices to generate these contrasts which somehow means you get to enjoy the sensation of all the flavours of all the ingredients providing it's prepared and cooked properly.

Thai curry, for me is much more varied than Indian, not just in the spices used but also the basic ingredients of meat, poultry or seafood and of course vegetables and once again has to be prepared properly to fully experience what I'm talking about.

Now there are plenty of folks enjoying Thai curry they have made themselves and one day they will hit upon the "balance of flavours" effect I'm talking about and when they do the first time, it's one of those OMG moments. Wow!! After that moment everything else is just a huge disappointment. Don't want to sound religious but the word "epiphany" springs to mind!

Authentic Thai curry is a truly exquisite dish and need not (for the faint hearted) be avoided, we can show yo how to make a spicy and a mild curry in the same pan at the same time and please everyone. A simple trick not many chefs know about, but a master stroke for anyone serving a mixed bag of diners.

Now you may have noticed, I haven't even mentioned red curry, green curry and yellow curry, all of which have their own distinctive flavour and aroma. There are watery or oily curries, milky and creamy curries, the latter two usually using coconut milk, but not always.

So when you take into account all those different colours, textures, flavours, aromas, spices, meats and vegetables etc it's no wonder folks end up with a less then perfect balance.

So to sum up, getting the right ingredients ready at the right time, preparing them in the right way and adding them at the right time will give you the results you're looking for. Any thing else just won't be the same, I promise you.

Now I don't want to make it sound difficult, it isn't, but like everything else in life, it's only easy after you have been shown how and "understand why" we do things the way we do with our authentic Thai recipes. Then you can apply those lessons to all versions of Thai curry and have the feast of your life.

Tesco Lotus is the nearest western style Super Market, it sells most grocery items including fresh milk, drinking water, fruit, vegetables, suncream, music, books, and newspapers; as well as a bakery and pharmacy.
